#RavsRecipes: Cheesy Cauliflower Cakes With Chipotle Crema

My BFF has been trying to go easy on the grains lately. I understand because my gut gets gassy and weird if I eat too many myself, and may the Baby Zeus help us all if I eat wheat because no bathroom will ever be the same. 

ANYWAY.

My BFF is always looking for yummy things to eat while sticking to her fewer-grains plan and I want to do everything I can to support her. Because after you've been worst middle school enemies at the skating rink and finally came around to being besties in high school, you accept her unconditionally. Even when she dated my ex-boyfriend. Even when we joined a cult in college. Even when we were half a world apart and roomies off and on. Even after we both got married. 

You do things like make your BFF yummy food because she makes you a better person in a way that no other relationship does, and you're freaking grateful for her. SO YOU CAN SUPPORT HER, DAMMIT. Just like she supported you during heartbreaks and childbirth and cleaning your house when you thought burning it to the ground would be a better plan (it wasn't).

Cauliflower is one of those things that people love to pretend is a substitute for potatoes. It's not. It's a vegetable powerhouse in its own right. I mean, as long as you don't eat it raw. Gag. 

Shredding a head of cauliflower is easy with a cheese grater. You can also use a food processor, but that creates more dishes, and it's going to be messy no matter what you choose. Of course, you can also choose the pre-shredded bag option in the grocery store, and that's totally acceptable.

Ingredients:

One head of cauliflower, shredded
1-2 eggs
1/2 cup shredded parmesan
Salt and pepper
1/2 cup crema, sour cream, or plain yogurt
1 tsp chipotle paste
1 tsp lime juice

Directions:

Combine shredded cauliflower, one egg, parmesan, and salt and pepper in a mixing bowl. If it all holds together, skip the second egg. If not, add another egg. I made mine with two eggs, and that was a mistake because they came out a little bit eggy and that's not what I wanted. My BFF deserves better, tbh. 

In a medium skillet, melt butter and olive oil, or any cooking oil you have on hand. Heat until sizzling hot, but not smoking. Medium heat is a good plan here. You can do medium-low heat if you're afraid of burning it or if your stovetop runs hot.  

Drop spoonfuls of cauliflower mixture into greased skillet and flatten with the back of a spatula. Cook for 5-ish minutes on each side. 

While your cauliflower cakes are baking, mix chipotle paste, lime juice, and crema together in a small dish. Transfer to a small Ziploc bag and cut the tiniest corner off the bag to pipe onto the finished cakes. Or skip it and just dip the cakes straight in the sauce. It's your call, and you can't make the wrong decision. 

When cakes are finished, plate and eat immediately. Share with your BFF who has been through all the things with you and still wants to be around you for God only knows why.
